This began as a simple way of trying to make use of some leftover chili, but has quickly become my family’s favorite queso recipe (along with many of their friends)! I made it last weekend for our lake trip. It makes so much that it was perfect for a crowd. After some tweaking, this is our favorite way to make it. Best of all the crockpot does it for you! Here are the ingredients (I didn’t show the Velveeta because we like the Blanco variety, but you could use Mexican):

My Three Men’s Queso
1 can black beans, rinsed
1 can corn, undrained
1 can Rotel, undrained
1 package ranch dressing mix
1 tsp. cumin
1 Tbsp. chili powder
1 tsp. onion powder
2-3 chicken breasts
1/4 tsp. cayenne pepper
1/2 tsp. garlic powder
1/2 tsp. pepper
1 Tbsp. olive oil
1 cup diced onion
2 Garlic cloves, minced
3-4 lbs Velveeta Quesa Blanco
In a medium sized skillet, heat oil and cook onions until translucent. Then add garlic and cook a minute more. Set aside.
Set your crock pot to low and add chicken, onion/garlic mixture, black beans, corn, rotel, all the seasonings and the ranch mix. Stir. Cover and cook for 6 – 8 hours.
After it is cooked, shred chicken using two forks. Add 3-4 lbs. of Quesa Blanco Velveeta, cut into thick slices. Leave in crockpot until melted (30 minutes or less). Serve with chips, on baked potatoes, or on flour tortillas.
