Lemon Cookies for Sunny Days
Nothing reminds me of summer as much as the bright cheery color of yellow. A bowl full of lemons scream summer to me and that's why these cookies seem to be the perfect indulgence for these sunny days!
This is a delicious recipe that implies fancy, but is super easy! You will love it and so will those for whom you make it. And did I mention it is easy? Yes, I did, but it was worth mentioning again!
LEMON COOKIES WITH LEMON GLAZE
- 1 box lemon cake mix
- 1/3 cup oil (I've used olive oil for half this measurement)
- 2 T water
- 1 egg
- 1/3 cup chopped pecans
Mix ingredients thoroughly. Roll in balls and place on baking sheet about 2" apart. Bake 9-11 minutes at 375.
- 2 cups powdered sugar
- 3 to 4 tablespoons lemon juice
- Yields approx. ¾ cup of glaze
Place your powdered sugar in a medium size bowl. Add lemon juice, a tablespoon at a time, while stirring. Continue adding until glaze is thick, but pourable. Add more powdered sugar or juice as needed to get desired consistency. Pour over cookies while slightly warm.
